Magic Brew is the coffee alternative made from local wild plants and chaga mushroom. Finely ground roots from chicory and dandelion as well as freshly harvested chaga from birch forests provide a nutty, bitter taste.

• Chicory root is also known as chicory coffee and can be used as a coffee alternative. The root has been valued as a power plant for centuries.
• Chaga mushroom (Schillerporling) is a medicinal mushroom that most commonly grows on tree trunks in northern regions. The native peoples of North America use Chaga as a peace and welcoming drink.
• Dandelion root is also a classic local alternative and was previously drunk as Muckefuck.

This wild alternative to beans tastes mild and not as sour as an espresso. Nevertheless, it contains roasted aromas that make it taste similar to filter coffee. The chaga mushroom gives it a light cocoa note. 

In times of crisis, coffee was hard to come by, so alternatives had to be found. The roots of various wild herbs and grains, or barley malt and tree fruits, were used for “Muckefuck”. When roasted, the inulin it contains turns into oxymethylfurfurol, which tastes like coffee. Without caffeine. But the nutrients and proteins from the plant are in the drink. Application

• Briefly bring a measuring spoon (3g) to the boil with (plant-based) milk in a saucepan. Froth and enjoy warm. Also ideal as a baking ingredient, in a smoothie or as a wild addition to coffee beans. Simply mix 50/50 with normal coffee.

• Note: When preparing Magic Brew, small amounts of fine grains may remain as sediment as the ingredients are not 100% soluble. If you prefer a cleaner texture, simply filter the drink after preparation or pour it through a fine sieve.
