If you go to a coffee shop and the matcha you are served doesn't have rich and bright emerald tones, it probably isn't ceremonial quality. Put simply, there are two main types or “grades” of Matcha: Ceremonial and Culinary. The biggest difference between these two is the time of year the tea leaves are harvested. It determines the special properties and intended preparations of matcha, which have been cultivated with great care by Japanese tea farmers for centuries.

Ceremonial grade matcha tea leaves are generally of higher quality and have a deeper shade of green, which is due to the higher concentration of chlorophyll in younger tea leaves. Culinary matcha has a more subtle color palette that comes from older tea leaves that have been in the sun for longer and become darker.

With a sweeter taste and often a higher price, Ceremonial Grade Matcha is highly prized for ceremonial purposes. Culinary matcha, on the other hand, is used in cooking and baking, and in modern cafes it is sometimes preferred for lattes and other milk-based drinks.

While the health benefits are relatively similar for most commercially available varieties, Ceremonial Grade Matcha has higher levels of caffeine and L-theanine (more on this below). Culinary matcha, on the other hand, often contains slightly higher levels of antioxidants and nutrients. Tea purists tend to favor ceremonial grade matcha grown during the first harvest season, or ichibancha, meaning "first tea." In the second and third harvest seasons - Ichibancha, "second tea", and Sanbancha, "third tea" - the older tea leaves are picked, resulting in more bitter notes and muted pigments for Culinary Grade matcha.

In clinical studies, alpha, theta, and beta brain waves have been found to increase within 30 minutes to 1 hour of drinking green and black tea, with green tea in particular improving alertness, attention, and overall cognitive function.

Interestingly, the mice in the study that were exposed to social isolation stress experienced the antidepressant effects of matcha "mediated by activation of the dopamine D1 receptor," according to the researchers. They concluded that there is "strong evidence that matcha improves mood and mental health, depending on the psychological state of the individual."

But did you know that research shows matcha contains up to five times more of the amino acid than any regular green tea? This is because matcha is grown in the shade for a longer period of time, whereas regular green tea is exposed to direct sunlight for much longer, reducing its L-theanine content. Wondering how L-theanine can trigger increased serotonin (and dopamine) production?
